Tanghulu: Candied Fruit Skewers
Long ago in northern China, there was a young street vendor named Lian who sold fruit in the winter markets. Business was slow. You see, in the winter, plain old fruit wasn't exactly the hottest commodity.
One night, determined to change his luck, Lian began experimenting. He put a variety of fruit on a skewer, dipped it into melted sugar and set them outside to cool in the freezing air. By morning, they had transformed into something magical. Each one was coated in a clear, glassy shell, with perfectly preserved fruit inside. The big question, however, was... how did it taste?
The first customer took a bite.
Lian and a few potential customers waited in silent anticipation.
"Delicious!!!' proclaimed the customer.
Soon a small crowd gathered, each person curious, then delighted. It was sweet, crisp, juicy, tasty. It was Tanghulu.
By the end of the day, Lian had sold out.
